Meet Maddy
Growing up surrounded by the flavors of Korean and Asian home cooking, food was always more than just a meal — it was how we showed love. Sunday afternoons meant folding dumplings with family, experimenting with sauces, and sneaking bites before dinner was ready.
After years of dreaming about sharing those flavors with the world, The Coastal Bun was born. What started as a crazy idea scribbled on a napkin became a bright pink food truck parked in the heart of the Florida Keys.
The concept was simple: take the pillowy, soft bao bun — one of Asia's most perfect street foods — and fill it with bold, crave-worthy flavors. Korean fried chicken drizzled with spicy sriracha. Slow-cooked pork belly topped with tangy pickled veggies. Tender bulgogi with a kick of spicy mayo. Every bao is made with love and packed with flavor.

Based in Islamorada, we bring Asian fusion flavors to the laid-back Keys lifestyle. Sun, salt air, and bao buns — it doesn't get better than that.
